Asian Style Breakfast
Pho - Egg, bone broth, rice noodles, and thinly sliced meat ( Chicken or beef). bean sprouts, fresh herbs, lime, chilli.
Korean bibimbap and sticky rice is served with Thai grilled pork skewers
Chicken ginger kongee
- Chicken stock: Some of our recipes here at taste.com.au call for low salt chicken stock, but as rice needs a fair bit of seasoning, go the full strength.
- Ginger: Look for young ginger with thin skin. Avoid wrinkly looking ginger as this means it’s lost some moisture and will be woody.
- Rice: We use straight-up long grain rice but short grain and jasmine can also be used.
- Chicken: This recipe uses tenderloin as it poaches quickly and has a gentle flavour. Other recipes may use chicken mince that has been marinated in soy sauce, rice wine and cornflour.
- Rice wine: Also known as shaoxing, this is an essential ingredient in Chinese cooking. We only use a teaspoon but if you’re a fan add more.
- Salt and pepper: Taste before seasoning, as some stocks are saltier than others and use white pepper rather than cracked black.
- Green onion: add a sweet and fresh onion flavour as well as a pretty garnish.
- Sesame oil: Sesame oil is a seasoning and is not meant to be used as a cooking medium.
- Fried shallots: Super crunchy, these are available in the asian aisle of the supermarket.
- Soy sauce: Use soy sauce labelled light as the dark version is for adding colour.
